Harvest complete, new oil milled, filtered and blended and the first feedback from the olive oil fare was great. Now it is time to get back to the grove and put the trees to bed for the winter! You might ask how we do it, well it is sort of natural. We check the grove for any damage, we give the ground a deep plow to permit lots of fresh air to the roots over the winter and then walk away and leave nature rest and recuperate over the winter until early January. It’s sort of a respect thing – we work our trees pretty hard all year so they need time to rest also 🙂
