The winter at Sta. Margherita is a time to hibernate. The cold winds come and clear out the grove of everything that is not ready to give new growth. From harvest through to early spring, the grove is rested and we let nature protect itself for this period, ready to regenerate in the spring.
That first action of spring is a strong one and a wake up for our beloved 1600 trees. The deep plowing opens the soil and nutrients to the now warming weather, and this brings on the start of the spring growth. We are happy to back, and over the next two months our primary activity will be the annual clipping of the trees, which takes, as you can imaging, a little time!
